Yes, you can backup mailbox(es) using the 'Exchange Brick-Level Mailbox Backup' feature available with IBackup for Windows 9.5.0 or higher.

The application backs up the contents of the selected mailbox(es) or an individual email to a Personal Folder (.PST) file that can be accessed using Microsoft Outlook at any time.

This is not a method for the complete backup or recovery of the Exchange Server databases. For the purpose, use the 'Exchange Server backup/restore' feature of the IBackup for Windows application.
